Adam Westgarth Joins The Pheasant Hotel as Head Chef – A New Chapter for North Yorkshire Dining

As The Pheasant Hotel, Harome celebrates 40 years of refined countryside hospitality, it welcomes a new culinary era with the appointment of Adam Westgarth as Head Chef. Known for his thoughtful, ingredient-led approach, Adam brings a fresh vision grounded in seasonality, sustainability, and a deep sense of place, marking the beginning of an exciting new era for the hotel’s culinary direction.

Well-respected for his grounded yet inventive approach to modern British cooking, Adam brings with him a passion for provenance, seasonality, and understated elegance, values that perfectly reflect The Pheasant’s renewed vision.

At the heart of this new chapter is a deeper connection to the land. Just minutes from the hotel, Ravenswick Hall Farms is now home to The Pheasant’s own working farm, providing the kitchen with regenerative crops, heritage-breed livestock, and wild estate game. This bounty is complemented by produce from the hotel’s kitchen gardens and ingredients foraged daily from the surrounding hedgerows, meadows, and woodland.

Working closely with the team at Ravenswick Hall Farms, Adam will draw directly from the farm’s harvest — from vegetables lifted fresh from the soil each morning to wild garlic, mushrooms, berries, and herbs gathered from the nearby North Yorkshire countryside. This hyper-local approach brings true seasonality to the plate and ensures that every dish reflects the landscape from which it came.

“We have something incredibly special here in Harome,” says Adam. “The ingredients are all around us; on the estate, in the hedgerows, and the woods. I want our guests to taste this place in every dish: honest, full of character, and unmistakably North Yorkshire.”
